Kelp Noodle Summer Salad

Kelp noodles are a great way to get the texture of noodles that people love but without the high-calorie count and carbs. They can be served raw which makes them a perfect noodle substitute when following a raw food diet.  Kelp noodles are unique but they are fairly easy to find. You can purchase them in your local health food store and even some mainstream grocery stores. They are also available on Amazon.

Kelp noodles are a thin, clear noodle made from mineral-rich kelp, a type of brown seaweed. They don’t taste like very much which means you can mix them with any favorite dressing or seasoning. They contain zero grams of fat, zero grams of sugar and have almost no carbs.

Kelp noodles don’t require any cooking. You just rinse the noodles in water. Rinsing helps to separate and soften the noodle. I like to use kitchen scissors to cut the noodles to a more manageable length.

My kelp noodle summer salad recipe is super simple and can be made in less than 20 minutes. The ingredients are basic but when combined together give you a light summer taste that you can feel good about. Lemon juice, olive oil and garlic make a refreshing dressing and the sundried olives, sliced tomatoes and chopped parsley make the dish very filling.

Simply combine all the ingredients and if use Bragg Liquid Aminos to taste. A little bit of liquid aminos goes a longs way. You can always add more so use sparingly.

Once it is well combined and you have seasoned to your liking, plate and top with my OK Living Foods Garlic & Herb cheese crumbles. The cheese crumbles add an texture and flavor that makes the dish irresistible. If you aren’t able to get my OK Living Foods products yet, then substitute with you favorite vegan cheese crumble.

Instructions
  1. Follow the instructions for kelp noodles on the package. Cut noodles to the desired length.
  2. Transfer noodles to a container
  3. Squeeze juice of 1 lemon over noodles, mix and let marinate
  4. Meanwhile prepare tomatoes and the rest of the ingredients
  5. Your noodles are ready when they have dropped in volume and excess liquid is at bottom of the container
  6. Transfer noodles to a mixing bown and add all ingredients except the cheese and toss gently until noodles are well coated.
  7. Add more lemon juice and or Bragg Liquid Aminons to taste
  8. Top with cheese crumbles before serving
