Spiced Walnut Meat

It isn’t a coincidence that walnuts look like the human brain. One of the biggest benefits of walnuts is their ability to support your brain health. They truly are “brain food”! Walnuts contain one of the highest amounts of omega-3 fats of any nut. The Journal of Alzheimer’s Disease highlighted the walnut as providing a “significant improvement in memory, learning ability, anxiety, and motor development compared to the control diets without walnuts.”

The brain-boosting benefits of walnuts are just one of the reasons why I love to prepare my spiced walnut meat. My walnut meat is extremely versatile. Once you start using you will be surprised by the number of ways you discover you can use it. From healthy tacos to kelp noodle salad, to the foundation for delicious hummus, you will love having spiced walnut meat on hand.

It is easy to shy away from this recipe because of the prep necessary for the walnuts. To release all the health benefits, and make the walnuts easy to digest, it is critical that you soak your walnuts. We then dehydrate the walnuts to achieve the perfect “meaty” texture. If you don’t have a dehydrator you can dry them in an oven but you will need an oven with a very low setting. You do not want to heat your nuts over 118 F otherwise you risk destroying all the wonderful nutrients you released with soaking.

Instructions
Germinate Walnuts
  1. You can either purchase already germinated and dehydrated walnuts. Or you can prepare walnuts yourself.
  2. Soak walnuts in purified water overnight for 7 to 8 hours
  3. Drain and rinse in the morning
  4. Dehydrate at 115 F for 2 to 3 days until crispy
Make Walnut Meat
  1. All all ingredients to food processor
  2. Process stopping occasionally to scrape down the sides of the working bowl just until walnuts release the oil. The whole process shouldn’t take more than 2-3 minutes.
  3. Transfer to a glass container and keep refrigerated for 2 weeks. To preserve freshness , freeze leftovers for later use.
